I have been looking forward to cooking these wings all week.  I would hate to count the number of wings Mister and I have consumed over our years together but for sure, it is our standard to decide the quality of a sports watching establishment. Sure, sound on for the game, number and placement of tv's, high tops and nooks and crannies - all important. But. If you cannot make a good chicken wing, we will likely not call you the next day.

However, since Little has come into our life, pub chicken wing consumption has declined directly proportionate to our "watching whatever game at whatever pub" nights have.  So we have been forced to bring the ultimate chicken wing recipe in house.  If you try these wings,  I think you will like our house.

In an ode to Seattle - java capital of North America - these wings have been brined in strong coffee and then heavily seasoned in more coffee and an assortment of complimentary herbs and spices. They are finished with a light brushing of maple syrup which caramelizes and creates a sticky, darkened crust.

{Seahawks} Salted Coffee Crusted Wings

The perfect game day wing inspired by the city of Seattle's love of two things - their coffee and their Seahawks.

Ingredients

  • 2 lbs chicken wings & drumettes, frenched
  • 1 cup strongly brewed coffee, cooled
  • 1 cup of water
  • 1 bay leaf
  • 2 Tablespoon + 1 teaspoon salt
  • 1 Tablespoon espresso grounds
  • 1 Tablespoon ground black pepper
  • 2 1/4 tsp spanish paprika
  • 1½ tsp garlic powder
  • 1½ tsp dried thyme
  • 1½ tsp dried Oregano
  • 1 tsp poultry seasoning
  • ½ tsp. cayenne
  • 2 Tablespoon maple syrup

Instructions

  1. Trim chicken wings & drumettes of excess fat. I prefer them "Frenched" which just means removing the excess cartilage & skin from the 'handle' of the drumette. It is easy to do with a small sharp nice, but not necessary. See link in post for instructions on how to do it.
  2. Place wings in a bowl and add brewed coffee, water, 2 tablespoons of salt and bay leaf. Cover and marinate in the fridge for 6 hours to overnight.
  3. Mix remaining ingredients, except maple syrup, in a small bowl. Adjust seasonings as preferred (i.e. more or less heat)
  4. Preheat oven to 350 degrees.
  5. Drain and rinse wings. Pat dry with paper towel. Toss lightly in spice mixture ensuring wings are evenly coated.
  6. Arrange wings on baking rack (with lined drip pan underneath) and cook for 15 minutes.
  7. Baste lightly with maple syrup and then cook an additional 10 minutes.
  8. Baste a second time lightly with maple syrup and then broil for an additional 3 -5 minutes to caramelize sugars.
  9. Enjoy!
