Sweet Potato & Chorizo Breakfast Hash

This breakfast hash gets its bright orange from sweet potatoes, chorizo and a surprising splash of blood orange and ruby red grapefruit juice at the end.

Sometimes you just have to throw it all in a pot and see what happens.

This is one of those times.

I mentioned in this post last week that we subscribed to a weekly meat service called Beasty Box.  Essentially it amounts to the vegetable version of a CSA box.  It is fantastic and even with the box being just a few servings of meat a week, I still find it more than enough for this carnivorous family of three.  As the weekend was approaching and I had just picked up my latest box, I needed a meal I could use up the remnants of the previous weeks box.  A hash is perfect for that.  In this case, a couple of sausages, ham and bacon are sautéed with some onions.  Tip: the better quality bacon you buy, the less you use.  I would strongly recommend stepping out and away from the big grocer brands and considering your local butcher.  A little can go a long way.

I love a big glass of orange juice with breakfast just as much as the next person.  But, for myself,  the reality is it's just not worth it.  Caloric-ly speaking.  Unless of course you are going to add champagne.  Then definitely worth it... and in that case, you may as well hold the OJ.

But citrus is synonymous with breakfast and I decided in this case a splash & a squeeze at the end would brighten and sweeten a savoury hash.

And on a personal note, Happy Fathers Day to my dad and my husband.  There is an old Irish saying;  "when I count my blessings, I count you twice"  - well, in that case, quadruple my count.  I have been blessed with a father who sacrificed so much for his family.  He never missed a game, recital or celebration - whether in person or spirit.  I truly always felt my mom, sister and I were the centre of his world - and still are today.  Fast forward thirty years and here I sit today - so grateful to be blessed yet again, with the father of my son.  A man who I know will never miss a game, recital or celebration - whether in person or in spirit.  And for who I know with certainty - have Little and I at the centre of his world.  I love you dad. And I love you hunney. Happy Fathers Day.  And spoiler alert - you are looking at your Fathers Days breakfast. xo

Sweet Potato & Chorizo Breakfast Hash

This breakfast hash gets its bright orange from sweet potatoes, chorizo and a surprising splash of blood orange and ruby red grapefruit juice at the end.

Ingredients

  • 2 chorizo sausages
  • 1/2 white onion, diced
  • 2 medium sweet potatoes, diced
  • 4 -5 small carrots, diced
  • 3 - 4 slices of Canadian bacon or proscuitto or serrano ham
  • 2 scallions, chopped
  • 1 ruby red grapefruit
  • 1 blood orange
  • 1 Tablespoon fresh thyme

Instructions

  1. Heat a heavy frying pan over medium high heat.
  2. Slice open casing from sausage and empty sausage meat into pan. Break apart with wooden spoon and cook about five minutes.
  3. Add onion, stir and sauté until translucent, about 3 -4 minutes.
  4. Add sweet potatoes, bacon/ham , and carrots. Stir often and cook until carrots are tender, about 5 - 10 minutes.
  5. Add scallions, reduce heat to low and ensure all ingredients are well combined.
  6. Juice one grapefruit and one blood orange over hash and stir well. Finish with fresh thyme.
  7. Remove from heat, add fresh cracked pepper to taste and top with a soft basted egg.
