After a weekend full of chocolate eggs, it was time for the real deal! We are big egg fans in this house and I am excited to partner with BC Egg to create and share some of my favourite recipes using BC eggs this year.

f you know me, you know if I am hosting I love to prepare as much as possible ahead of time and eggs offer so many options for great make-ahead entertaining dishes. I made these adorable mini puff pastry quiches for a brunch spread and they were a huge hit. Made with store bough puff pastry, and customized with fillings that all your guests will love. My favourite was the smoked salmon, chevre and dill!

Mini Quiche with Puff Pastry

INGREDIENTS

Quiche

  • 1 tablespoon butter

  • 4 eggs

  • 1 cup cream

  • 1 teaspoon salt

  • 1 package of puff pastry, thawed

  • 1 sheet frozen puff pastry, thawed

Filling Options

  • Option 1: Smoked salmon, goat cheese, fresh dill

  • Option 2: Asparagus, roasted red pepper, mozzarella cheese

  • Option 3: Ham, spinach and feta cheese

INSTRUCTIONS

1. Preheat the oven to 400 degrees Celsius. Grease a mini muffin pan with the butter and

set aside.

2. Add the eggs and cream to a large glass measuring bowl. (preferably with a spout)

Whisk together gently until well combined. Stir in salt.

3. On a lightly floured surface, unfold and roll out the puff pastry. Roll the sheet into a 12-

in. square; cut into small squares about 3” by 3”. Place each square into the prepared

muffin cups. Gently press the bottoms and up sides, allowing corners to point up.

4. Carefully pour the egg mixture into the muffin cups stopping just before the cup fills.

5. Add your fillings. We created three varieties above but the options are endless. In

addition to the combinations above, other great choices would be:

• Crumbled cooked bacon, cheddar cheese & chives

• Cooked mushroom and thyme

• Spring peas, mint and feta cheese

6. Bake 12 minutes or until pastry is a golden brown. Be careful not to over cook. Remove

and cool on a wire rack, serve immediately.
