Blackened Steak & Waffle Potatoes
A steak & potatoes dinner on your table in 20 minutes with a little help from a cocoa & espresso spice rub, a smoking hot pan and your waffle maker.
Remember last time when I talked about my "good intentions". Well, it was NOT my intention to share two On Board in 20 meals back to back.
My intention was better time management and scheduling. The reality was the days moments got away from me.
Now unlike lack of sleep, good eating habits and exercise - the unintended result of failing this particular intention resulted in being able to share this with you today.
So, in my opinion... win win.
A really nice steak always feels like a special occasion to me. Something you buy to celebrate something, or maybe just a date night in. It's funny. When I am creating these 20 minute meals, I am thinking about a family. A busy family. I think about creating meals that the Bigs and Littles will each enjoy. When putting this board together, it occurred to me that a 20 minute meal might just make a nice date night meal. Like a Friday night perhaps, where you feed the kids first and wait to have dinner together after they are down. I think this steak board would work perfectly for that.
The key to getting this meal on the board in 20 minutes was really taking advantage of all appliances - big and small - in your kitchen. The kettle, the waffle maker, the toaster oven and two burners on the stove are all in play tonight. The espresso and cocoa rub with a few more spices give the steak a beautiful crust IF, and only IF, you make sure the oil is smoking in your pan. Don't be afraid of a little smoke. Really, it makes a huge difference.
Don't skip the eggs here. It's not breakfast-y to me when they play more of a condiment role then an equal partner. Truthfully, we really didn't even eat the whites. It was the creamy, golden yolks combined with the blackened steak crust that make it a perfect marriage.
